Cooking Update

I promised an update of our "Once A Month Cooking" endeavor, so here it is. We love it! It's been so great to come home and do a few easy preparations and enjoy a delicious, home cooked meal. Most of the recipes have been great, some have been "just okay." Some Ryan like more than me, and some I like more than him, but all in all it has been wonderful. I thought I'd share our favorite recipe thus far, too. We're definitely planning to do this again soon!

Baked Jambalaya

3 tbsp. bacon bits
1/2 c. chopped celery
1/2 c. chopped green bell pepper
2 tbsp. green onion
1/2 lb. cooked kielbasa, sliced
1/2 lb. cooked ham, diced
1/2 tsp. thyme
1 tsp. cajun seasoning
28 oz. can crushed tomato
14.5 oz. can beef broth
1 1/2 c. uncooked long grain rice

1. Mix all ingredients, except rice in large mixing bowl.
2. Add rice and put into greased 9x13" baking dish.
3. Cover and bake at 375 degrees for 1 hour, or until rice is done (took us a little longer than an hour).
4. Uncover, stir, and serve. It's that easy! And super yummy! (At least we think so :) )
